เอนไซม์ Pectic |Pectic enzyme หรือที่เรียกว่า เพคติเนส เป็นโปรตีนที่ใช้ในการทำลายเพคตินซึ่งเป็นเยื่อเจลลี่เหมือนกาวที่เก็บเซลล์พืชไว้ด้วยกัน ในเพคตินไวน์อาจทำให้เกิด "หมอกเพคติน" ซึ่งไม่สามารถล้างได้ง่ายโดยไม่ต้องใช้เอนไซม์เพคติคเพคติเนส, Pectinase Enzyme, Pectine Enzyme เป็นเอนไซม์ที่ย่อยสลาย เพคติน เป็น polysaccharide ที่พบในผนังเซลล์ของพืช ที่เรียกกันทั่วไปว่า เอนไซม์ pectic ได้แก่ pectolyase, pectozyme และ polygalacturonase ซึ่งเป็นเอนไซม์เพคติเนสที่มีการศึกษาและใช้กันอย่างแพร่หลายมากที่สุด
